Soft Snickerdoodles

Inspired by this recipe by Lil Luna.

Makes approximately 24 cookies.

Takes roughly 45 minutes to prep, 8-10 minutes to bake.

Ingredients:

2 3/4 cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, melted

1 1/2 cups sugar

2 eggs (room temperature)

1 teaspoon vanilla extract

For cinnamon sugar coating:

1/3 cup sugar

2 tablespoons cinnamon

Instructions:

Preheat oven to 350 degrees.

Mix dry ingredients together first—flour, cream of tartar, baking soda, and salt. Set aside.

In a large bowl (this is where you’ll form your dough), mix sugar and melted butter together until fully combined.

Add eggs and vanilla extract to the sugar/butter mixture. Fully incorporate.

Next, dump in your dry ingredients and mix together with a whisk or fork to form your dough. (You could also use a stand mixer if you’re not looking for a forearm workout.)

In a separate, shallow dish, combine cinnamon and sugar for coating.

Line your baking sheets with parchment paper.

Using your hands, roll your dough into balls that are about 2 tablespoons each in size. One by one, roll your dough balls around in the cinnamon sugar coating. *For extra cinnamon sugar flavor, knead the dough in your hand after the first coating to incorporate the cinnamon sugar, roll it back into a ball, and then coat in cinnamon sugar for a second time.

Place cookies 2 inches apart on lined baking sheets.

Bake for 8-10 minutes. Be careful not to overbake! The cookies will firm up once you take them out of the oven.
