Chewy Sugar Cookies

Inspired by this recipe from America’s Test Kitchen.

Makes approximately 24 cookies

Takes 30 minutes

Ingredients:

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups sugar (plus more for coating)

2 oz cream cheese

6 tablespoons unsalted butter, melted

1/3 cup vegetable oil

1 egg

1 tablespoon whole milk (you could probably use any milk you like)

2 teaspoons vanilla extract

Instructions:

Put your oven rack in the middle position and preheat to 350 degrees.

Whisk the dry ingredients together first—baking soda, baking powder, and salt. Set aside for now.

Dump the sugar and cream cheese into a large bowl and pour the melted butter over top. Mix together using a fork or whisk (whatever feels right!).

Add the vegetable oil and whisk to combine. Then, add the egg, milk, and vanilla extract. Stir until smooth.

Once all the wet ingredients are combined, add your dry ingredients and mix until it becomes dough.

Now it’s time to assemble the cookies. Pour some sugar (about 1/3 cup) onto a plate or shallow dish.

Use your hands to roll the dough into balls that are roughly 2 tablespoons each, and roll the balls around the sugar to get them coated.

Set your sugar-coated dough balls on a baking sheet lined with parchment paper. Once all your balls are formed, use the bottom of a glass to flatten out the cookies (this part is super satisfying).

Finally, sprinkle extra sugar over your flattened cookies.

Bake at 350 degrees for 10 minutes, or until the edges are just about to turn brown.
