Small Batch Banana Muffins
Do you need to get rid of one old, sad, extremely ripe banana that’s starting to attract fruit flies?
Make a small batch of these super easy chocolate chip banana muffins.
Takes 10 minutes to prep and 25 minutes to bake.
Makes 4 muffins.
Ingredients:
1 old sad banana (extremely ripe)
1/4 cup sugar
2 tablespoons vegetable oil
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
Pinch of salt
Pinch of nutmeg
1/3 cup chocolate chips (you could skip these, but why would you want to?)
Instructions:
Preheat oven to 350 degrees fahrenheit.
Grab a muffin tray and pop 4 liners in there.
Mash up that old banana in a medium bowl.
Add sugar and vegetable oil. Stir to combine.
Add the remaining dry ingredients—flour, baking powder, baking soda, cinnamon, salt, and nutmeg.
Add chocolate chips, if you know what’s good for you.
Mix to combine.
Evenly distribute your batter into the muffin liners.
Bake for 22-25 minutes.
